Bibo Restaurant

A thrillingly playful take on Audalusian cuisine is in the offing at Bibo, the Mondrian's New house restaurant. Peter Gray reports.

The Mondrian, Shoreditch is set to welcome the latest branch of Dani Garcia’s massively popularly Bibo restaurant chain this August. 

The brasserie-meets-tapas bar concept has proved a huge hit around the globe with Garcia now overseeing Bibo branches in Malaga, Madrid, Marbella, Tarifa, and Doha.

For the group’s London opening, the restaurant have created a warm and inviting Andalusian style space, complete with rose coloured tiles, rattan pendant lighting and tan leather furnishings. This is ably complemented by a Spanish courtyard with hanging plants and a retracting glass roof.

The Andalusian influence continues with the menu – which is brimming full of García staples like Oxtail Brioche, jamon croquetas and fried quail eggs. Meanwhile, the cocktail list features rebujito (sherry & lemon-lime soda), agua de Sevilla (pineapple juice, cava, and whiskey) and a selection of vermouth-based beverages.

Garcia’s latest project is merely the latest step in a career that has seen the coveted chef find favour both in his native Spain and increasingly around the world. The chef has won an incredible three Michelin stars for his cooking, which combines the best elements of Andalusia cuisine with a range of international influences. 

With starring roles at such renowned Spanish restaurants as Tragabuches and Calima, Garcia will be eager to show Londoners what he can do.

The new restaurant will take pride of place in the Mondrian, which is set to open for business on the 2nd of August 2021. The venue, which will take over from the much loved Curtain Hotel, will be the chain’s first branch in London following the takeover of the group’s Bankside Hotel by Sea Containers. 

In addition to Garcia’s new restaurant, the venue will also boast a prestigious private member’s club, a rooftop lounge and a world class swimming pool and spa.
