Hotel food can be criminal, we know, but fortunately, no one told chef Niklas Ekstedt. The Swedish maestro is busy preparing for the opening of his very first UK restaurant, Ekstedt at The Yard, at the Great Scotland Yard Hotel.
The eaterie, which will replace Robin Gill’s pandemic disrupted The Yard restaurant, is lining up to be one of the hottest restaurant openings of 2021 in London.

Known for his decidedly traditional take on wood fired cooking, Ekstedt is a master of teasing subtle nuances of flavour from his various approaches to flame grilling.
The Chef, who previously worked as such Stockholm institutions as El Bulli and The Fat Duck, focuses on seasonally driven menus Nordic staples, like ember-baked new potatoes and juniper-smoked turbot.

For Ekstedt at the Yard, the Swedish chef will once again focus on this ‘new Nordic Canon’ with highlights including:
- Oyster flambadou with smoked apple and beurre blanc nasturtium
- Ember baked leeks, white fish roe, smoked roe deer
- Reindeer, smoked celeriac, black pudding and salt baked roots to share
- Cep soufflé with birch ice cream and blueberries
To complement this menu freshly baked bread and butter will be produced on a daily basis.
